Garden Greens with Tamari, Ginger & Lime

 

So, I finally made it out into the garden in between the showers of rain and to my surprise there was a fair few greens ready for the taking…ok so some of them had bolted but I thought the flowers were pretty and made a nice feature on the windowsill.  A quick turn in the pan with the addition of some tamari and lime made a super duper side dish to our lunch this afternoon.

 

 

Ingredients – Serves 2

1 large bowlful of garden greens or a bag of green leafy vegetables of your choice

3 cloves of garlic minced

1 thumb sized piece of ginger peeled and finely grated

1 1/2 tspns of lime juice

1 tspn tamari

3/4 tspn xylitol or cane sugar (which ever you can handle)

pinch of sea salt

glug olive oil for cooking

 

Method

heat a heavy based pan and add a decent glug of olive oil add the garlic and ginger and cook for a few minutes, turning often so it does not catch and burn.  Add the greens and the rest of the ingredients stirring every minute or so until the greens wilt and soften.

Delicious served straight away with a few cashew nuts and a generous portion of puy lentils.
