Plum Sake Apple Crumble for Kiki

For someone who loves desserts, cakes and sweet delights I have just realised that they are in the minority in my recent posts.  In order to amend that I thought that it deserved something a little bit special.

We had friends over for Christmas and they both gifted me with some lovely items.  I received a great bottle of Plum Sake from my friend Kiki and some detox tea and a beautiful jar of Japanese 16 grain ancient rice from my friend Hiroo.  I was so excited to receive both gifts and wanted to be able to do them justice with my recipes that I developed around them.  I hope they will both be pleased and enjoy my creations from their gifts.

This recipe is complete indulgence and despite the need for eating lighter, detoxing and general sprucing ourselves up after the festive indulgences, I could not miss this one out…maybe a cup of detox tea will help wash it down?

Ingredients

Serves 3 to 4 people

250 g stone ground spelt flour

2 teaspoons of xylitol

pinch of salt

120g vegan margarine

450 g eating apples of your choice cored and sliced

4 generous knobs of vegan margarine

150ml of plum sake

drizzle of agave or sprinkle of xylitol

 

Method

In a large bowl mix together the spelt, xylitol and salt.  Add the margarine and mix with your fingers until it resembles breadcrumbs and begins to clump together.  Alternatively you can put these ingredients into a food processor and process until they begin to come together in the same way.  Set the crumble to one side.

In a heavy based oven proof pan melt the vegan margarine and cook the apples until they begin to colour and soften.  Add the cinnamon and the plum sake and reduce to a light syrup.  Do not reduce it too much as more liquid will evaporate during the cooking process.

Add a drizzle of agave  or sprinkle of xylitol if required to sweeten the apples and remove from the heat.  Top the apples with the crumble and cook in a preheated oven at 190C for  about 30 minutes until the crumble is crisp to the touch.

Serve hot, warm, cold or any which way with vegan ice-cream or non-dairy cream of your choice.
